HOMEMADE ENERGY SNACK BARS FOR KIDS RECIPE

A Heinrich favorite snack bar recipe - These TKM chewy granola energy bars are filled with delicious and healthy ingredients like high protein nut butter, antioxidant rich honey, the high fiber of chia seeds, flax, almonds, and pumpkin seeds plus topped with chocolate for the ultimate YUM!! Plus these are dairy-free and gluten-free! An amazing energy-boosting HIGH LOW LEAN NO snack! 

INGREDIENTS: Makes 8 long bars or lots more small square ones

  • ½ cup creamy organic unsweetened almond butter or peanut butter (the runnier the better!) 

  • 1 ½ tablespoons organic extra-virgin olive oil

  • 3 tablespoons honey

  • 1 teaspoon vanilla extract

  • ½ teaspoon cinnamon

  • ⅓ cup flaxseed meal

  • 1 tablespoon chia seeds

  • ½ cup gluten free old fashioned rolled oats

  • ⅓ cup unsalted almonds, chopped into pieces 

  • ⅓ cup unsalted pumpkin seeds 

    For on top:

  • 2-3 tablespoons chocolate chips

  • ½ teaspoon extra-virgin olive oil

PREP:

  1. Add unsweetened almond butter or peanut butter, olive oil, honey, vanilla and cinnamon to a pan and place over very low heat. Stir until the mixture is really creamy and smooth. Remove from heat and immediately stir in flaxseed meal, chia seeds and oats. Stir in almonds and pumpkin seeds. Stir until all is combined. You want to make sure the mixture is still nice and creamy. 

  2. Line an 8x4 inch loaf pan or 8x6 glass pan with parchment paper; pour the mixture in and spread out evenly and press so it’s even and flat.

  3. Place chocolate chips and ½ teaspoon olive oil in a microwave safe bowl. Microwave on high for 30 seconds. Chocolate chips will be slightly melted. Evenly sprinkle them over your mixture. 

  4. Cover the bars with foil, and place bars in the freezer for 20 minutes or in the fridge for up to 1 hour. Your mixture should now be hardened. Cut into either 8 long granola bars or you can cut into squares to make smaller portions. You can store bars in the fridge for around 1 week.
