NEW RECIPE: EASY HOMEMADE GRANOLA

You will want to sprinkle this granola on just about everything. Not only is it ridiculously healthy - filled with fiber, vitamins, nutrients, healthy oils and protein - but it’s super tasty too. Easy to take on the go in a little baggie as a trail mix, add to parfaits, as a bowl of cereal with almond milk or even on top of salads. The only negative about this granola is when it runs out.

Ingredients: (Makes a double batch)

  • 2 cup old-fashioned oats

  • 1 cup steel cut oats

  • 2  cup almonds, roughly chopped

  • 1  cup pumpkin seeds

  • ⅓ cup chia seeds

  • 1/2 cup maple syrup

  • 1/2 cup coconut oil (melted)

  • 2 tbsp vanilla

  • 1 cup each of dried fruit (dried cherries, dates, dried cranberries)

Prep:

  1. Preheat the oven to 300°. Line a baking sheet with parchment paper.

  2. In a big bowl, combine the oats, almonds, seeds, vanilla, maple syrup and coconut oil.  

  3. Spread the mixture on a baking sheet as evenly as possible and bake for around 35 minutes.

  4. Once toasted and slightly golden, remove from the oven and add in the dried fruit.

  5. Allow to cool on baking sheets before serving. We store ours in a container and keep cool in the refrigerator.
